Design Your Own Experience

Let Freda’s Kitchen Create An Experience For You

It’s a Kid’s Party!  – minimum 10 — $25 per childYour kids, 12 and under, will love this 1.5 hour party where we make individual pizzas and decorate giant cupcakes!  The special child will receive their own cloth apron to keep, and participants will each get a special remembrance of the experience.  

2 courses – minimum 8 — starting at $60 per person

We will prepare together two unique courses for your small group, sharing tips, tricks, and the history of the cuisine. The host will receive a fabric apron; each participant will receive the recipes and a remembrance of the experience.  

Typical classes last 1.5 hours, with time to enjoy what you prepared.

3-4 courses – minimum 8 — starting at $75 per person

The most complete culinary experience!  Your group will prepare a full-course menu of ethnic cuisine.  The host will receive a fabric apron; each participant will receive the recipes and a remembrance of the experience.  

Typical classes last about 2 hours, with time to enjoy what you prepared.

 
Four 1-hour weekly sessions – minimum 8 — $125 per personGreat for busy people on a time crunch!  Get together on a weekly basis for four weeks to work on one tasty course per week.  Bring a bottle of wine and your friends; guaranteed to get one hour of “me time” at least once a week with your crazy schedule!

Freda's Kitchen Recipe of the Month – try new ethnic recipes from our personal chefs

Indian Chicken Makhani

Happy April!  This month’s recipe comes from Sunita Bhatnagar.  It is one of her family favorites, and we have enjoyed making it for several clients.   The chicken is extra tender, and the delicious aromas are sure to fill your kitchen! 

Ingredients For Chicken:

  • I tray of boneless skinless chicken thighs
  • Ginger garlic paste – 1 ½ tsp
  • Jalapeno – 1
  • Cilantro
  • Lime Juice – 2 tsp
  • Yogurt – 1 ½ cups
  • Sour cream – ½ cup
  • Chille powder / paprika
  • Garam masala – Indian spice mix
  • Oil – 2 tsp
  • Salt to taste

 Method:

  1. In a food processor, combine ginger, garlic, chille, lime, oil, salt and spices.
  2. Grind it and add yogurt and sour cream and process till smooth. Marinate bite size pieces of chicken in this marinade for 6- 8 hours or overnight.
  3. Bake at 350 degrees for 30 minutes and then broil for 5 – 8 minutes.

 Ingredients For Sauce:

  • Tomatoes – 6
  • Tomato sauce – 6 table spoons
  • Cashews – fistful
  • Bay leaves – 2
  • Garlic cloves – 2
  • Ginger – 1 ½ piece, minced or grated
  • 1 Jalapeno – seeded and chopped
  • 1 stick of butter
  • 2 tsp honey
  • 2 tsp fenugreek leaves, washed
  • ½ cup heavy cream

 Method:

  1. Melt butter and add bay leaf and cashew pieces and sauté.
  2. Then add chopped tomatoes, garlic, ginger, chili, tomato sauce and salt.
  3. Bring to a boil, then reduce heat and cook uncovered for about 30 minutes.
  4. Transfer to a blender jar and blend until smooth.
  5. Strain through a fine mesh strainer into a saucepan.
  6. Keep on low heat and add fenugreek, honey and heavy cream.
  7. Then add the baked chicken pieces to the sauce and cook for 10 – 15 minutes.
  8. Garnish with cream.

About Freda's Kitchen – Ethnic foods taught by personal chefs, not just a cooking class

I’m Michell Huber, creator of Freda’s Kitchen.  Freda’s Kitchen brings to life the old world tradition of cooking with friends and family. Freda was my “babcia”, which means grandma in Polish.  My best childhood memories were spent in the kitchen with her making pierogi and krusczyki.

Throughout the years, the experience of spending time in the kitchen and laughing with good friends brought back all of those wonderful, warm, feelings of belonging from my childhood.

I work with local ethnic chefs and talented cooks who have a passion for their cuisines and want to share their cultures and recipes with you.

Let me help you create wonderful memories for you, your friends, coworkers, and family, sharing the love of old world heritage cuisine, just like grandma used to make.

Our first Tuscan Experience was BELLISIMO!!!

February may be a short month, but it has been a good one for Freda’s Kitchen.   We had our first event with Chef Dean, and the group was delightful!  Dean made the house smell like an Italian Cuchina as he demonstrated how to make a typical Tuscan meal of beef carpaccio, risotto, baked chicken, and Tuscan bean stew.  This particular group of ladies wanted an elegant dinner party where they could learn about the cuisine without getting their hands dirty and drink wine; Chef Dean did not disappoint!   If you are interested in your own Tuscan Culinary Experience, make sure you give us a shout!

We’re growing!

Welcome to our new Culinary Assistant, Danny Stroud.  Danny is a master at many things, and most recently worked in the Hollywood Film Industry.  He is also a musician, artist, and a carpenter.  I hear he makes a mean chicken coop, too!

Come learn how to make Vietnamese Pho and Spring Rolls!

While Austin is in a flurry in March with SXSW, Freda’s Kitchen will be preparing for its first official Culinary Experience at Tipping T on Fitzhugh Rd, next to Jester King.  Come join us on March 31 for an evening of Vietnamese Pho and Spring Rolls!  Chef Jen Du will be sharing her family’s national dish from 6:30 – 8:30 pm.  Tickets are $65 pp plus tax, and are limited, so get yours today!

We plan to highlight a different cuisine every month at Tipping T, so stay tuned for future events!

Freda’s Kitchen will be able to serve more of South Austin

Lastly, Freda’s Kitchen became a founding member of the Cook’s Nook.  The Cook’s Nook is a new incubator for food and beverage startups.  In a few months, we will have access to their demo kitchens, and mindshare, which is really exciting!   It’s located in southeast Austin, so we will be able to offer our Culinary Experiences to more South Austinites.

January has been an incredible month for Freda’s Kitchen!  We had our first event in a new venue,  meeting new friends and sharing delicious cuisine.  And, we hired another chef!

One of the highlights of the month was an Indian Experience for the Dripping Springs Chamber of Commerce and Friends at the new Tipping T event venue on Fitzhugh Road.  It’s right next to the Jester King and Stanley’s Farmhouse Pizza on a road that is just exploding with new, fun places to check out.  Emily Tipps is the proprietor, and her family has and turned five acres of hill country into a beautiful, wooded retreat.  They have several cabins, and a couple houses, one of which was moved to the land and originally built in the early 20th century.  

The cabins/houses sleep 36 comfortably, and there is a brand new common house with a kitchen and dining room that had me at, “Hello”.  It’s rustic and comfortable, intimate and kitschy, and the perfect place to create a beautiful culinary experience.  Emily says that it’s the perfect place to elope to, or have a family reunion, friends’ weekend, or just a little getaway from Austin’s hustle and bustle.

Emily, and her sister Megan, created a warm, homey ambiance for the nine participants who shared the evening of January 28th with Chef Sunita and me.  As usual, Sunita outdid herself, the smells of her cuisine wafting through the rafters and out the windows of the kitchen.  I’m sure the coyotes were licking their chops as the smell of curry leaves and tumeric enveloped all of us in their wonderful scents.

Of course, the food was AMAZING!  Her masala chicken, ginger peas, lentils and rice, and delicious sesame naan stole the show.  Everyone left with full tummies, and new connections made.   It always tickles me to hear strangers get to know each other, sharing their stories with each other,  Facebook friending each other on the spot.  

We thoroughly enjoyed working with Emily and the Tipping T., so stay tuned for more events in the coming months.

In other news, we hired a new chef!  Jen Du is an accomplished entrepreneur and loves to cook her heritage cuisines, Vietnamese and Korean.  If you’ve always wanted to try Vietnamese or Korean foods, this is your chance to not only try them, but learn their history and how they are made.  Jen is available for events starting immediately, so make sure you let us know if you have a group interested in getting together.

Now, we are looking forward to February!  Chef Dean is preparing for his first event with Freda’s Kitchen.  I can’t wait to cook with him!  The menu is incredible!  I’ll be talking more about that event in a couple weeks.  In the meantime, if you would like a Tuscan Culinary Experience, let us know so that we can get you scheduled.  He only does a limited amount of events, so don’t wait too long!

What a way to start off the New Year!!!  I had the pleasure of hosting seven lovely new friends while we made two types of pierogi, meat and potato.  Everyone jumped right in!  We had two teams compete to see who could make the most pierogi out of their dough.  Everyone was a winner, because they all got to taste each other’s masterpieces and take some home to share!

Wow!  It’s been a whirlwind three months at Freda’s Kitchen!    Back in September, I knew that I wanted to do something unique, something that would bring people together, something reminiscent of simpler times.  I started to think about the best parts of my childhood, and my memories of cooking with my grandmother just struck me.

I started talking to friends about my memories, my ideas, and it all started to gel.  My friends were supportive, and people have come out of the woodwork with advice, connections, and ideas.  It’s been a wonderful experience!

Fast forward past all the “business” stuff, and I found my first cook, Sunita.  You can read her bio here.  She made Freda’s Kitchen a reality.  From the first time I met her, through our first dry run, I knew she had something special to offer.

Since then, I’ve been meeting with chefs, looking at all sorts of kitchens, and getting everything ready for the January official launch.  It’s exciting!

Last week, we held a sneak peek for Dripping Springs Women2Women group, and it was an unequivocal success!  You can read some of the comments from the participants here. 

I’m looking forward to getting Freda’s Kitchen off the ground and serving you all amazing cuisine and experiences you will never forget!

Freda's Kitchen FAQs – Interactive cooking experiences in Dripping Springs, Austin

Why is it an Experience and not a cooking lesson?

Freda’s Kitchen is all about the experience!  The smells, the tastes, the culture, the history of the cuisine, the connections you make with your fellow participants.  Our chefs will not only show you how to prepare the menu, they will share with you their stories.  You participate as much or as little as you wish; we won’t force everyone to learn how to cut an onion, but you will be asked to be a part of the preparation. 

Will I learn anything? 

Definitely!   Our chefs love to teach!  We can show you the basics, from how to boil water, to advanced tips known by experienced chefs. 

What’s a typical experience like? 

Experiences are intimate, and your group will enjoy being close to the action.  The chef will explain the ingredients, methods, and stories behind the menus.   Everyone will participate in some way, whether it’s kneading dough, chopping veggies, or helping saute the vegetables.   Ask as many questions as you like, or sit back a relax.  It’s up to you.

What should I wear?

Be comfortable.  Because you will be working with food, consider saving your best outfit for another day.   If you have long hair, please bring something to tie it back, and make sure you have comfortable, closed toe shoes.

Will I get to eat why I make?

Yes!  That’s the best part of the experience!  Once the meal is complete, your group will get a chance to enjoy what they made!

What if I don’t know how to cook?

You only do what you are comfortable preparing.  However, you will be introduced to skills during the preparation.  You choose what you wish to learn.

What if I have food allergies?

Please be sure to let us know any food allergies before we plan the menu so that we can take your needs into account.  We have cooked vegan and gluten free menus, and can accommodate most allergies if we know in advance.

What does a typical event cost?

Each event is unique because you choose from menu options.  Please see our menu page to see typical pricing.

Who does the cleanup?

We clean up all of the kitchen materials used to prepare the meal, so you won’t have to worry about washing pots and pans!

Do you serve alcohol?

We do not serve alcohol, but you are welcome to bring your favorite beverage.

What is your cancellation policy?

We will ask for a credit card to hold the reservation.    If you must cancel, please do so in writing more than 7 days before the event.  Cancellations within 7 days of the event are non-refundable.

I don’t have a big kitchen, can I still host an Event?

We may be able to locate a nearby community kitchen, so don’t let that stop you.

 Sunita Bhatnagar, our chef for the evening, recently moved to Central Texas from Bombay India.  She has spent her life in her family’s kitchen and will share with you her family cooking memories as you learn how to create authentic Indian cuisine.

We can’t wait to introduce you so some of the best ethnic chefs and experienced cooks in the Austin area.  They can’t wait to share with you their love of their heritage and passion for food.

Specialty:  Italian Cuisine

Sunita moved to Austin from Bombay, India a couple years ago, and she brings with her a lifelong love of her country’s culture and cuisine.  Trained by the most influential women in her life, her mother and mother-in-law, she has beautiful memories of cooking with her family that she would like to share with you.

Dean is a native Austinite, but his love for Italian cuisine has deep family roots.  His Italian-born grandfather, Pasquale Pavone, prepared his “Sunday Gravy”  and taught Dean about the amazing meats and truffles that are native to Abruzzo.  Dean continued the family tradition by studying at the  prestigious Italian Culinary Institute for Foreigners in Piedmont, Italy.
